Gardenia is a genus of flowering plants in the coffee family, Rubiaceae, native to the tropical and subtropical regions of Africa, Asia, Madagascar and Pacific Islands, and Australia. Gardenia yellow and blue pigment powders are water-soluble with good stability and safety, can serve in most of food applications like beverage, snack, bakery, confectionary and dairy.
